Our Story

Overseen by Executive Chef, Paul Hart, Brasserie Prince celebrates the very best of Scottish produce with classic French cooking. Serving seasonally inspired, classic bistro dishes that harmonise quintessentially French flavours with local ingredients.

The colourful and vibrant interiors showcase a strong partnership between internationally celebrated Martin Brudnizki Design Studio (MBDS), and Olga Polizzi, Rocco Forte Hotels  Director of Building & Design and sister to Sir Rocco Forte. Brasserie Prince offers a fresh colour palette of soft blues, green hues and blush pink tones which complement the high gloss lacquer, House of Hackney wallpaper and stained oak panelled walls.
